Researchers at UC Davis School of Medicine have recently discovered that apple juice seems to slow down the process that may lead to heart disease. Apples can be a primary source of soluable and insoluable fiber, which helps prevent cholesterol build-up in the lining of the vessel walls.

Researchers at the University of California found that apple pectin acts as an antioxidant against the damaging portion of cholesterol in the blood stream.

Researchers have found that raw apples are the richest of fruits in pectin, with the Jonagold variety leading other varieties.

Compounds in apples and apple juices called "Phyto Nutrients" act the same way as red wine and herbal tea; they delay the break down of LDL or "bad'' cholesterol.
